This has become an instant family favorite. It's super easy, piling everything onto a cookie sheet. And it's really flavorful. The sauce is optional for serving, but we highly recommend using it.
Serves 8
Ingredients:
3 pounds chicken breast, cubed
2 small red onions, cut into 1 inch pieces
2 red bell peppers, cut into 1 inch pieces
4 carrots, peeled and cut into 1/4 inch pieces (about 1 c)
30 oz can of chickpeas, rinsed and drained
2 TBS evoo
3 tsp paprika
3 tsp cumin
1 tsp red pepper flakes, optional
1.5 tsp garlic powder
1.5 tsp onion powder
1.5 tsp oregano
1 tsp cinnamon
3 tsp kosher salt
White Sauce (optional, but highly recommended, for serving)
1 c yogurt
2 Tbs mayo
1 Tbs apple cider vinegar
1 tsp lemon juice
1/2 tsp salt
1/2 tsp sugar
1/8 tsp black pepper
Directions:
Preheat oven to 425F/220C. Add chicken, veggies and chickpeas to a large mixing bowl. Drizzle with oil and season with the spices and salt. Mix until evenly combined. Transfer to two rimmed cookie sheets and spread in an even layer.
Bake for 20 - 30 min until chicken is cooked through and veggies are tender. Broil for last 2 minute for an extra char if desired. Serve with white sauce drizzled on top, optional but recommended.
