Ingredients:
1 cup all purpose flour
1 cup yellow cornmeal
2/3 cup white sugar (I don't use that much!)
1 tsp salt
3 1/2 tsp baking powder
1 egg
1 cup milk
1/3 cup vegetable oil (I use coconut oil in liquid form)
*I have also added frozen corn. Just pour some in and mix it before putting in the pan.
Directions:
1. Preheat oven to 400 degrees F. Spray or lightly grease a 9-inch round or square pan.
2. In a large bowl, combine the dry ingredients: flour, cornmeal, sugar, salt and baking powder. Stir in the egg, milk and oil until well combined. Pour batter into pan.
3. Bake 20 - 25 min. until toothpick comes out clean.
